If you can, get both US and UK Blu-Ray versions.
They both share the same extras, but UK version has an essential feature length commentary by Thomas Alfredson and JAL.
Image quality is much better on US Blu-Ray disc. If that isn't that important to you, go ahead and get a UK disc. It will work in US BR players.
DVD version is Magnolia/Magnet pictures recent edition with adjusted theatrical subtitles and same extras from Blu-Ray minus commentary.

Did Magnolia/Magnet ever release a version with the correct theatrical subtitles? I've only been able to find a copy once or twice at nearby video stores, but none of them say anything specifically about restoring the original subtitles.

In terms of picture quality, this site has screenshots from both Blu-rays taken from the exact same scenes so you can compare for yourself:

Basically the UK is slightly brighter.

I prefer the UK edition because it comes with the commentary.
