I find this question intriguing. Immortals are immune to disease, so if Eli's condition is essentially a disease, one would think that MacLeod -- or any other Immortal -- would be immune to that, too. As to what would happen to Eli if she drank an Immortal's blood, that's even more uncertain. The vitality of Immortal blood might do anything from give Eli an enormous energy rush to causing a toxic reaction, sickening or even killing her.
